I don’t know about you guys, but the winter blues are GONE in this house. BUHBYE cold weather—hello sunshine!! Flowers are blooming, birds are singing, and the grill is getting cleaned up! Warm weather means one thing in this house, more grilling, and more farm fresh produce sides and salads. To kick off the trend, we decided to go away from the salad with lettuce “norm”, and venture into the land of cabbage!
There are plenty of different tastes and textures in this light and crispy salad and each one compliments one another perfectly. You have the deep and earthy flavor of the red cabbage, a hint of sweetness from the carrots and orange, a bit of tang from the white wine vinegar and then there is the CRUNCH!
We paired this Red Cabbage Salad with our Almond Crusted Chicken dish, which leads to the perfect under 500 calories meal, that leaves you feeling full and satisfied.

You will need one large bowl
Ingredients
- 2 oranges
- 4 cups thinly sliced Red Cabbage
- 3 medium Carrots - cut into matchsticks
- 1 large Orange Pepper - thinly sliced
- 2 tbsp Fresh Chives - diced
- 3 tbsp White Wine Vinegar
- 2 tsp Extra Virgin Olive Oil
- 1/4 tsp Salt
- 1/4 tsp Freshly Ground Black Pepper
Instructions
- Remove both the peel and white pith from the oranges.
- Cut oranges into segments and drop into bowl.
- Add cabbage, carrots, pepper, chives, vinegar, extra virgin olive oil, salt and black pepper.
- Toss all ingredients well and let stand for 5 minutes before serving.
