One bite of this thick chocolatey brownie, paired with a glass of ice cold milk is guaranteed to make that mid-day slump better, put a smile on your face, and leave that tummy feeling satisfied!
We were really surprised how well these turned out! Adding just a little bit of espresso is what gives these an extra touch of YUM and enhances the chocolate flavor.
If you want to change up the recipe a little, we suggest using unsalted butter instead of vegetable oil, and try regular chocolate instead of nonfat cocoa. Cheers guys!
You will need two medium mixing bowls.
Ingredients
- 1 cup Sugar
- 4 tbsp Vegetable Oil
- 3 Egg Whites
- 1 Shot Espresso
- 1/2 cup All-Purpose Flour
- 1/2 cup Unsweetened Cocoa
- 1/4 tsp Baking Powder
- 1 1/2 tsp Kosher Salt
- 2 tsp Pure Vanilla Extract
Instructions
- Spray the inside of an 8-inch baking pan with cooking spray.
- Line 8-inch baking pan with parchment paper. The cooking spray will help the paper to form to the pan.
- In medium mixing bowl combine flour, cocoa, baking powder, and salt.
- In separate mixing bowl combine sugar, oil, egg whites, espresso, and vanilla extract. Mix well.
- Next, combine the wet ingredients with the dry ingredients.
- Spread mixture into baking pan.
- Bake for 20 to 25 minutes.
- Allow brownies to cool completely in pan.

These look AMAZING!! I cannot wait to try them. Question: How dense is the batter before you bake them? I would like to add nuts to the recipe but I don’t want them to sink to the bottom of the pan. Thank you

Hi Chelsea-Leigh! The batter is very dense, but I’m curious how this is going to turn out. Possibly try adding a bit more wet ingredients, such as coffee, instead of the espresso. Let us know how it goes!
