Don’t you just hate it when you get to making your weekly grocery list, and you’re checking your cabinets, and realize you have tons of old bread that you haven’t used? You then question is it fresh enough for sandwiches and toast this week, or should I get another loaf? Stop the second guessing and buy that fresh loaf for your lunches, because we have a very simple solution for your leftover bread conundrums.
Bread pudding, also known as “poor man’s pudding”…is it a dessert? Is it a side? Is it breakfast? I can tell you one thing… It is a YUMMY!
The great thing about this bread pudding recipe is that it uses a lot of simple ingredients that you more and likely will have on hand. The depth of flavor in this specific recipe comes from the sweetness and texture of the raisins and craisins, the ever so light hint of cinnamon and brown sugar, and my favorite—cloves. What a combination!
And then there is this…. The sauce! Gracious–just when you thought it couldn’t get any better. This sweet and slightly creamy little sauce, just brings it home, adding another layer of sweet cinnamon goodness in every single bite.
So fret not over that leftover bread. Put on a pot of coffee, and savor every single last bite of this “hit the spot” bread pudding. And just think—no more wasted bread!!
You will need a medium sauce pan, a 7x11 casserole dish, and a medium mixing bowl. Pre-heat oven to 350°F
Ingredients
- 4 cups Bread - cubed
- 2 cups Whole Milk
- 2 Eggs + 1 Yolk - beaten
- 1/8 tsp Salt
- 1/2 cup Light Brown Sugar
- 1 tsp Pure Vanilla Extract
- 1/4 tsp Ground Cloves
- 1/4 tsp Ground Cinnamon
- 1/4 cup Raisins - soaked in hot water for 5 minutes then drained
- 1/4 cup Craisins - Soaked in hot water for 5 minutes then drained
- 1 stick Unsalted Butter
- 1/2 cup White Sugar
- 1/2 cup Heavy Cream
- 3/4 tsp Ground Cinnamon
- 2 tbsp Vodka
Instructions
- Combine in sauce pan - milk, eggs, salt, brown sugar, vanilla, cloves, and cinnamon.
- Cook on medium heat for 5 minutes stirring occasionally just allowing it to warm up and dissolve the sugar.
- Add cubed bread, raisins, craisins, and warmed mixture to mixing bowl.
- Stir to combine.
- Butter the casserole dish and add bread pudding mixture.
- Sprinkle a little cinnamon and sugar on top if desired.
- Bake in oven for about 25 minutes.
- Melt butter in sauce pan on medium heat.
- Add sugar.
- Cook for 2 minutes stirring frequently.
- Add cream, cinnamon, and vodka.
- Cook for about 5 minutes or until it thickens a bit.
