Lemon Rosemary Roasted Chicken is so simple and can be tossed together in no time…Full of flavor and very cheap make.
First, making the flavor mixture was a cinch. Garlic, lemon zest, fresh rosemary – then mix in some extra virgin olive oil, add salt and pepper…Perfect!
Open a pocket in between the skin and meat and fill with the flavor mixture.
Roast to perfection and enjoy!
Set chicken out for 30 minutes prior to roasting.
Preheat oven to 350°F
Ingredients
- 3 Lemons - 2 Cut into Wedges and 1 used for Zest
- 3 Garlic Cloves - Minced
- 2 tsp Fresh Rosemary - Chopped
- 1 pack of Whole Cut Chicken
- 1/2 tsp Salt
- 1/2 tsp Fresh Ground Black Pepper
- 2 tbsp Extra Virgin Olive Oil
Instructions
- Mix the following - Minced garlic, zest of 1 lemon, chopped rosemary, salt, and pepper. Set aside.
- Divide the flavor mixture to ensure you will have enough for each piece of chicken.
- Create a pocket between the skin and meat of the chicken using your fingers.
- Place the flavor mixture underneath the skin.
- Arrange chicken on a baking sheet, but space them apart to ensure they are not touching.
- Next, arrange lemon wedges in spaces between chicken.
- Bake for 35 minutes or until the juices run clear.
