Traditionally, Irish stew was made of lamb and root vegetables that were readily available to peasants on their farms in Ireland. As Irish immigrants made it over to the United States, the recipe for Irish stew evolved to include different meats, veggies, and additives.
In this version, we’ve taken a hearty beef chuck roast and Guinness Stout to kick it up a notch. The results are a filling meal that only tastes better the next day.
Preheat oven to 350°F
Ingredients
- 3 tbsp Vegetable Oil
- 3 lbs Boneless Beef Chuck Roast (cut into 1-inch pieces)
- 2 Medium Onions chopped
- 2 Stalks Celery chopped
- 3 tbsp All Purpose Flour
- 1 tbsp Minced Garlic
- 1 tbsp Tomato Paste
- 2 tsp Fresh Thyme chopped
- 1 1/2 tsp Salt
- 1/2 tsp Fresh Ground Black Pepper
- 1 12oz bottle Guinness
- 1 cup Reduced Sodium Beef Broth
- 3 Carrots (peeled and cut into 1-inch chunks)
- 4 small Turnips (peeled and cut into 1-inch pieces)
- 4 medium Yukon Gold Potatoes (peeled and cut into 1-inch pieces)
- 1/4 cup Fresh Parsley (chopped)
Instructions
- Heat 2 tablespoons oil in dutch oven over medium-high heat until almost smoking.
- Add beef in two batches; cook 10 minutes per batch or until browned on all sides.
- Remove beef and put on large plate.
- Add remaining 1 tablespoon oil to dutch oven; heat over medium heat.
- Add onions and celery and cook about 10 minutes or until onions are softened and translucent.
- Add flour, garlic, tomato paste, thyme, salt and pepper; cook and stir 1 minutes.
- Add Guinness and scrape up the browned bits from bottom of dutch oven.
- Return beef to pan and stir in broth.
- Cover and bake for 1 hour.
- Stir in carrots, turnips, and potatoes.
- Cover and bake for 1 hour and 20 minutes or until beef and vegetables are tender.
- Stir in Parsley and serve.

In the directions it says I’m putting it in the oven for an hour adding more stuff then putting it back in to cook for an hour and 20 min. I was wondering why in the top it says it takes only 1 3/4 hours to make? Am I putting it in the oven twice for that long?

I checked on this and we believe that time was incorrectly recorded on yummly. The recipe instructions are correct, so stick with that but we will definitely get this corrected. Thanks for letting us know!
